In honor of Pi Day, I was going to make a pie, but here’s a nice lil’ fruit tart instead (my stomach decided it wanted something fruity half-way through the trip to the grocery store…) Anyways, here’s a quick and simple recipe that my mom and I used! 🙂
Crust – can be store-bought if pressed on time; if not:
1/2 cup confectioners' sugar 1 1/2 cups all-purpose flour 1 1/2 stick unsalted butter
1 (8-ounce) package cream cheese, softened 1/2 cup granulated sugar 1/2 cup heavy cream 2 tbsp honey Greek Yogurt
Fresh strawberries, blueberries, peaches, really anything
Crust: Add sugar, flour and butter, and knead into a ball. Press dough evenly bake for 9 – 11 minutes at 400 F. Cool.
Filling and topping: Beat the cream cheese, sugar, heavy cream and yogurt until smooth, and then spread over crust. Slice up the fruit and arrange around the edges in concentric circles. Add blueberries to fill in space. Design it however you wish! 🙂
Place the tart in the refrigerator for about fifteen minutes, and then it’s ready to be served! Enjoy!
