recipe: shrimp pad see ew

Pad see ew translates into “fried with soy sauce,” and that’s basically the foundation for this popular Thai dish. It’s made with a combination of light and dark soy sauce (one for the color, one for the flavor), and is topped with eggs, protein, chinese broccoli. As for the star of the show: flat, broad rice noodles (but of course, we can improvise if your local Asian store doesn’t have any of that type). 


For the sauce: 

2 Tbs Dark Soy Sauce
3 Tbs Light Soy Sauce
3 Tbs Oyster Sauce
3 tsp Sugar
1 tsp Rice Vinegar
A dash of water

Other ingredients: 
Four stems of Chinese Broccoli or One Bunch of Broccolini
One pack of Rice Noodles
One package of frozen cooked shrimp (or protein of choice) 
4 eggs


1. Defrost the shrimp a few hours prior to cooking. If you use any other protein, go ahead and cook it as you would just plainly. 

2. To make the sauce: Mix all the ingredients together, ensuring the sugar dissolves. 

3. Trim the ends of the broccolini or Chinese broccoli, and cut the stem into smaller, bite-size pieces. 

4. Cook the noodles according to the package instructions. Make sure you don’t leave them sitting around, since you want to use them almost as soon as you’re done cooking them. 

5. In a large skillet, scramble your four eggs to your liking. Then, remove and place aside. 

6. In the same skillet, add the broccolini and cook until the leaves have wilted and the stems are no longer tough. 

7. Remove everything from the skillet, and add another tbsp of oil. Then, toss the noodles with the sauce, making sure the noodles are adequately covered.

8. Toss in the eggs and broccolini and prior-cooked meat (if using shrimp, add in step 9) for a minutes, then remove from heat. 

9. Add two tbsp of oil into the skillet, and fry the shrimp on each side for two minutes, then remove. Top your pad see ew with the shrimp.

10. Serve for yourself and a friend!
