Crunchy on the outside and chewy on the inside: this time, I’m sharing one of my latest and absolutely simple and delicious recipes that I discovered — Brazilian cheese balls.
We discovered them first after visiting a Brazilian steakhouse, where these were served as complimentary sides and I first fell in love. All it takes is tapioca flour, milk, cheese, an egg and a bit of salt. So total cost? Probably less than 5 bucks. And all you do is mix everything together and bake — literally the easiest and cheapest crowd-pleaser and finger food to make.
Ingredients
1/3 cup of olive oil
2/3 cup of milk (any type works! you can even use half & half)
1 egg
1 and 1/2 cup of tapioca flour
1/2 cup of cheese, tightly packed (mozzarella or cheddar work, although you can add a bit less salt if you use the latter)
2 tsp of salt
Recipe
- Preheat oven to 375F.
- Add all ingredients to a large mixing bowl and blend until smooth. If it looks too watery, don’t worry! It’ll turn out ok.
- Take a 24-mini-muffin tray and spray with cooking spray.
- Fill each up to about 3/4 of the way (they will expand!)
- Bake for about 13-15 minutes.
- Cool and enjoy!

Is tapioca flour a must?

Not necessarily— you can sub in cassava flour too! Either will give it that chewy texture.
