What better way to start the day with something quick and simple, yet will keep you satiated until lunch? Here are my favorite breakfast wraps, filled with healthy fats, lots of protein, and absolutely delicious!
This recipe will make 8 breakfast wraps — share them with your friends and family, or freeze them for later!

Ingredients
- Mission Carb Balance Flour Tortilla (1 pack of 8)
- Eggs (2)
- Cage-Free Egg Whites, Kirkland (1 carton, ~460 g)
- Red Bell Pepper (1)
- Uncured Turkey Bacon, Columbus (8 slices)
- Organic Chunky Guacamole, Kirkland (4 of their pre-portioned cups)
- Salt, 1 tsp
- Pepper, 1 tsp
- Garlic Powder, 1 tsp
- Avocado oil-spray
*Note: I got all these ingredients from Costco, so the nutrition will correspond specifically to these ingredients, but you can always get them at any other grocery store!
Recipe
1. Bring a non-stick pan to medium-high heat, and add in your turkey bacon. [I don’t use oil here, since the fat from the bacon will render and help it release from the pan]. Cook for two minutes on each side, or until each side has browned.
2. Remove from heat and set aside. My pan is small, so I have to do them in batches of four. Repeat until all turkey bacon has been cooked.
3. Dice your red bell pepper. In a mixing bowl, add your bell peppers, eggs (x2), egg whites (1 carton), salt, pepper, and garlic powder. Whisk until combined.
4. In the same pan, pour in egg mixture, and scramble until the eggs are thoroughly cooked (here, I use the leftover oil from the bacon to cook the eggs. Extra yummy and saves you a trip to the sink!)
5. Remove the scrambled eggs and bell peppers from heat and set aside. Now, on to assembly!
6. Take one tortilla and place it on a piece of aluminum foil (or directly onto a plate, if you plan on eating immediately).
7. Place a slice of turkey bacon, and an eighth of the egg and bellpepper scramble, onto the tortilla. I like to pre-portion out the scramble directly in the pan into eighths to make it easier.
8. Add half of the container of guacamole. That’s all — now you can wrap each one up!
9. Repeat for the remainder of the tortillas, and freeze the ones you plan on saving.
10. To reheat, pop them in the microwave with a wet paper towel on top, and heat for about 2 minutes (or until evenly heated).
